How to Make Chicken Bake Mediterranean Style

  1. Preheat oven to 200°C (400°F).
  2. Heat 2 tablespoons of olive oil in a 3-liter flameproof, ovenproof baking dish over medium heat.
  3. Add 8 chicken drumsticks and cook, turning occasionally, for 5 minutes until browned all over.
  4. Transfer the drumsticks to a plate and cover with foil to keep warm.
  5. Repeat with 8 chicken thigh cutlets.
  6. Add 1 kg of potatoes (cut into 2cm chunks) to the dish and cook, turning occasionally, for 5 minutes until golden.
  7. Remove the dish from heat.
  8. Return the chicken to the dish. Top with 200g sun-dried tomatoes (halved), 150g Kalamata olives (halved), and 4 cloves of garlic (minced).
  9. Sprinkle generously with 2 teaspoons of fresh rosemary.
  10. Pour 150ml dry white wine over the chicken and vegetables.
  11. Season generously with salt and freshly ground black pepper.
  12. Bake in the preheated oven for 45 minutes, or until the chicken is cooked through and the potatoes are tender. Internal temperature of chicken should reach 74°C (165°F).
