  1. Cut and discard woody stems from 8 oz mushrooms.
  2. Finely mince the mushrooms.
  3. Set aside.
  4. In a small bowl, whisk together: 1/4 cup soy sauce, 2 tbsp rice vinegar, 2 tbsp hoisin sauce, 1 tbsp honey, 1 tbsp sesame oil, 1 tsp grated ginger, and 1 clove minced garlic. Set aside.
