How to Make Chipotle Chops
- Season both sides of the pork chops generously with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet (cast iron is ideal) over medium-high heat. Brown the pork chops for 1-2 minutes per side, until lightly golden.
- Remove the pork chops from the skillet and set aside on a plate.
- Add the remaining 1 tablespoon of olive oil to the skillet. Add the chopped onions and sauté for 2-3 minutes, until softened.
- Add the minced garlic and chopped chipotle peppers. Sauté for another minute, until fragrant.
- Reduce heat to low. Stir in the oregano, cumin, and 1 teaspoon of adobo sauce from the can. Cook for 2-3 minutes, stirring constantly, until the spices are fragrant.
- Return the pork chops to the skillet. Pour any accumulated juices from the plate over the chops.
- Spoon the chipotle pepper and onion mixture over and around the pork chops.
- Cover the skillet and cook over low heat for 10-12 minutes, or until the pork chops are cooked through and the internal temperature reaches 145°F (63°C). Flip the chops halfway through.
- Remove from heat and let rest for 5 minutes before serving. Enjoy!
