How to Make Chipotle Chops

  1. Season both sides of the pork chops generously with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet (cast iron is ideal) over medium-high heat. Brown the pork chops for 1-2 minutes per side, until lightly golden.
  3. Remove the pork chops from the skillet and set aside on a plate.
  4. Add the remaining 1 tablespoon of olive oil to the skillet. Add the chopped onions and sauté for 2-3 minutes, until softened.
  5. Add the minced garlic and chopped chipotle peppers. Sauté for another minute, until fragrant.
  6. Reduce heat to low. Stir in the oregano, cumin, and 1 teaspoon of adobo sauce from the can. Cook for 2-3 minutes, stirring constantly, until the spices are fragrant.
  7. Return the pork chops to the skillet. Pour any accumulated juices from the plate over the chops.
  8. Spoon the chipotle pepper and onion mixture over and around the pork chops.
  9. Cover the skillet and cook over low heat for 10-12 minutes, or until the pork chops are cooked through and the internal temperature reaches 145°F (63°C). Flip the chops halfway through.
  10. Remove from heat and let rest for 5 minutes before serving. Enjoy!
