How to Make Chocolate Marmalade Biscotti

  1. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the marmalade until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips and chopped chocolate-covered almonds.
  6. Turn the dough out onto a lightly floured surface and shape it into 3 logs, approximately 1 inch in diameter and 12 inches long.
  7. Transfer the logs to the prepared baking sheet.
  8. Bake for 25 minutes, or until the logs are firm and lightly browned.
  9. Remove from oven and let cool on the baking sheet for 5 minutes.
  10. Transfer the logs to a wire rack to cool completely.
  11. Once cooled, use a serrated knife to slice the logs diagonally into 1/2-inch thick biscotti.
  12. Arrange the biscotti slices, cut-side down, back on the baking sheet.
  13. Bake for an additional 10-12 minutes, or until golden brown and crisp.
  14. Let cool completely on a wire rack before serving. Enjoy!
