How to Make Chocolate Ribbon Banana Loaf

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, cream together 1/2 cup (1 stick) softened unsalted butter and 3/4 cup packed light brown sugar until light and fluffy (about 2 minutes).
  3. Add 2 large eggs, one at a time, beating well after each addition.
  4. Mash 3 ripe bananas with a fork and add them to the bowl along with 1/2 cup plain yogurt and 1 teaspoon vanilla extract. Beat until well combined.
  5. In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and 1/2 teaspoon ground cinnamon.
  6. Gradually add the dry ingredients to the wet ingredients, beating until just combined. Do not overmix.
  7. Stir in 1/2 cup peanut butter chips.
  8. Remove 1 cup of the batter to a separate bowl. Stir in 1/4 cup unsweetened cocoa powder until well blended.
  9. Pour half of the remaining (non-chocolate) batter into the prepared loaf pan.
  10. Top with half of the chocolate batter.
  11. Repeat layers, ending with the non-chocolate batter.
  12. Using a knife or toothpick, gently swirl the batters together creating a ribbon effect.
  13. Bake for 40-50 minutes, or until a wooden skewer inserted into the center comes out clean.
  14. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
