How to Make Chocolate Surprise Cookies

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. Whisk together 2 1/2 cups flour, 3/4 cup cocoa powder, 1 teaspoon baking powder, and 1/2 teaspoon baking soda in a medium bowl. Set aside.
  3. In a large bowl, cream together 1 cup softened butter, 1 cup packed brown sugar, and 1 cup granulated sugar using an electric mixer until light and fluffy.
  4. Beat in 2 large eggs and 1 teaspoon vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with 1/2 cup of the pecans, beginning and ending with the dry ingredients. Mix until just combined.
  6. Cover the dough and refrigerate for at least 15 minutes, or until firm enough to roll into balls.
  7. In a shallow dish, combine the remaining 1/2 cup pecans and 1 tablespoon granulated sugar.
  8. Roll 1 tablespoon of dough around 1 caramel candy, completely covering it.
  9. Press one side of the dough-covered candy into the pecan-sugar mixture.
  10. Place the cookie, nut-side up, onto the prepared baking sheet, leaving 3 inches between cookies.
  11. Repeat with remaining dough and candies.
  12. Bake for 10-12 minutes, or until the edges are set and slightly cracked.
  13. Let the cookies stand on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
  14. While the cookies cool, melt the white chocolate chips: Place 6 ounces of white chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until completely melted and smooth.
  15. Once the cookies are completely cool, drizzle the melted white chocolate over the cookies.
  16. Let the chocolate set for about 30 minutes before serving.
