How to Make Chocolate Walnut Ring

  1. Preheat oven to 180°C (350°F). Grease and flour a 23cm deep fluted ring tin.
  2. In a large bowl, sift together 2 cups all-purpose flour, 1 teaspoon baking soda, and ¾ cup unsweetened cocoa powder.
  3. Add 1 ½ cups granulated sugar and ¾ cup packed brown sugar to the dry ingredients.
  4. Make a well in the center of the dry ingredients.
  5. In a separate bowl, whisk together 2 large eggs, 1 teaspoon vanilla extract, 1 cup milk, and ½ cup melted unsalted butter.
  6. Pour the wet ingredients into the well of the dry ingredients.
  7. Using an electric mixer, beat on low speed for 3 minutes, then increase to high speed and beat for another 5 minutes, or until the batter is smooth and fluffy.
  8. Gently fold in 1 cup chopped walnuts.
  9. Pour the batter into the prepared ring tin and smooth the top.
  10. Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  11. Let the cake cool in the tin for 10 minutes before inverting it onto a wire rack to cool completely.
  12. **To make the chocolate ganache:** Combine 1 cup heavy cream and 8 ounces of semi-sweet chocolate chips in a small saucepan.
  13. Heat over low heat, stirring constantly, until the chocolate is melted and the mixture is smooth and glossy.
  14. Remove from heat and let cool to room temperature.
  15. Pour the ganache over the cooled cake.
  16. Decorate with chocolate curls and powdered sugar, if desired.
