How to Make Best Ever Banana Walnut And Caramel Cake

  1. Preheat oven to 180°C (350°F). Grease and flour a 20cm round cake tin.
  2. In a large bowl, cream together 175g softened butter and 200g granulated sugar until light and fluffy.
  3. Beat in 1 teaspoon vanilla extract.
  4. Add 4 large eggs one at a time, beating well after each addition.
  5. Mash 3 ripe bananas and stir them into the creamed mixture.
  6. In a separate bowl, sift together 225g all-purpose flour and 1 teaspoon baking soda.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Stir in 100ml milk until the batter is smooth.
  9. Prepare the caramel walnut topping: In a saucepan, melt 50g butter over low heat. Stir in 100g brown sugar until smooth. Add 50g chopped walnuts and mix well.
  10. Pour half of the cake batter into the prepared tin. Pour the caramel walnut topping evenly over the batter. Top with the remaining cake batter.
  11. Bake for 45-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  12. Let the cake cool in the tin for 5 minutes before inverting it onto a wire rack to cool completely.
  13. Serve with a dollop of whipped cream or ice cream. Enjoy!
