How to Make Comfort Tofu Loaf
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
- In a food processor, combine 14 oz (400g) extra-firm tofu (drained and crumbled), 1/2 cup rolled oats, 1/4 cup bread crumbs, 1/4 cup nutritional yeast, 1 tbsp soy sauce, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp dried thyme, salt and pepper to taste.
- Process until the mixture is well combined and mostly smooth. Scrape down the sides as needed.
- Add 1/2 cup finely chopped carrots and 1/4 cup finely chopped celery to the food processor. Pulse until just combined; don't over-process.
- Transfer the mixture to the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until golden brown and firm to the touch. If the top browns too quickly, cover loosely with foil.
