How to Make Cow Pound Cake

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together 2 cups all-purpose flour and 2 teaspoons baking powder. Set aside.
  3. In a large bowl, cream together 1 cup (2 sticks) unsalted butter, softened, and 1/2 cup vegetable shortening until light and fluffy.
  4. Beat in 2 cups granulated sugar until well combined. Add 2 teaspoons vanilla extract, 1 teaspoon lemon extract, and 2 tablespoons lemon juice. Mix well.
  5. Beat in 4 large eggs one at a time, mixing well after each addition.
  6. In a separate bowl, combine the dry ingredients (flour mixture) with 1 cup milk. Gradually add to the wet ingredients, mixing until just combined. Do not overmix.
  7. Pour 1/3 of the batter into a separate small bowl. Add 1/2 cup unsweetened cocoa powder and whisk until smooth.
  8. Pour 1/2 of the vanilla batter into the prepared loaf pan.
  9. Spoon 5 dollops of chocolate batter over the vanilla batter.
  10. Pour the remaining vanilla batter over the chocolate batter.
  11. Spoon the remaining chocolate batter over the vanilla batter.
  12. Using a butter knife or toothpick, swirl the batters together gently to create a marbled effect.
  13. Bake for 60-75 minutes, or until a wooden skewer inserted into the center comes out clean.
  14. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  15. Frost with your favorite frosting once completely cooled.
