How to Make Cran Raspberry Streusel Bars

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 7x11 inch baking pan.
  3. In a food processor, combine 1 ½ cups all-purpose flour, ½ cup rolled oats, and ½ cup granulated sugar. Pulse for 10 seconds.
  4. Add 1 cup (2 sticks) cold unsalted butter, cut into cubes. Pulse until the mixture resembles coarse crumbs.
  5. Reserve ½ cup of the crumb mixture.
  6. Add 2 large egg yolks to the food processor and pulse until just combined.
  7. Press the yolk mixture evenly into the prepared pan.
  8. Spread 1 cup of your favorite raspberry preserves or jam over the crust.
  9. Evenly sprinkle ½ cup dried cranberries, ¼ cup chopped pecans or walnuts, and ½ cup semi-sweet chocolate chips over the preserves. Gently press them into the dough.
  10. Crumble the reserved dough mixture over the top of the bar.
  11. Bake for 45-50 minutes, or until the topping is golden brown and the bars are set.
  12. Let cool completely on a wire rack before drizzling with melted white chocolate and cutting into 24 bars.
