How to Make Crustless Milk Tart

  1. Preheat oven to 160°C (320°F).
  2. Melt 100g (1/2 cup) unsalted butter in a medium bowl.
  3. Whisk in 4 large egg yolks and 150g (1 cup) granulated sugar until well combined.
  4. In a separate bowl, whisk together 100g (1 cup) all-purpose flour, 1 tsp baking powder, and a pinch of salt.
  5. Gradually add the dry ingredients to the egg yolk mixture, whisking until smooth.
  6. Slowly pour in 500ml (2 cups) milk (even slightly sour milk will work!), whisking constantly to prevent lumps.
  7. In a clean bowl, beat 4 large egg whites until stiff peaks form.
  8. Gently fold the egg whites into the batter, being careful not to deflate them.
  9. Pour the batter into a 35x20cm (14x8 inch) oven-safe dish. The mixture should be approximately 3cm (1.2 inches) deep.
  10. Sprinkle generously with cinnamon (optional).
  11. Bake for 45-60 minutes, or until the tart is set and golden brown. A toothpick inserted into the center should come out clean.
  12. Let cool completely before slicing and serving. The tart will firm up as it cools.
