How to Make Dark Rum Brownies

  1. Preheat oven to 350°F (175°C). Position oven rack in the lower third of the oven.
  2. Spray the bottom only of an 8-inch square baking pan with nonstick cooking spray.
  3. In a large bowl, combine one (15.25 ounce) box of brownie mix, 1/2 cup (1 stick) melted unsalted butter, 1/4 cup dark rum, 2 large eggs, and 1/4 teaspoon ground nutmeg. Mix with a wooden spoon until just blended and all dry ingredients are moistened.
  4. Stir in 1/2 cup semi-sweet chocolate chips.
  5. Spread batter evenly into the prepared pan.
  6. Bake for 40-44 minutes, or until a toothpick inserted 2 inches from the side of the pan comes out clean or almost clean.
  7. Transfer to a wire rack and cool for 15 minutes.
  8. While brownies cool, prepare the glaze: In a small saucepan over medium-low heat, combine 1/2 cup packed brown sugar, 2 tablespoons unsalted butter, 2 tablespoons dark rum, and 2 tablespoons milk.
  9. Cook, stirring constantly, until the mixture comes to a boil.
  10. Boil for 1 minute, stirring constantly.
  11. Remove from heat and stir in 1/2 cup semi-sweet chocolate chips.
  12. Stir until chips are completely melted and the mixture is smooth.
  13. Cool for 5 minutes.
  14. Spread glaze evenly over the warm brownies.
  15. Cool completely before cutting into 9 large or 16 small squares.
