How to Make Death By Chocolate Brownies

  1. Preheat oven to 180°C (350°F).
  2. Grease and line a 20cm x 30cm shallow baking tin with baking paper.
  3. Chop 200g dark chocolate into small pieces (about the size of your little fingernail) and set aside.
  4. In a food processor, grind 100g walnuts to a fine consistency.
  5. Add 150g rice flour, 75g sifted cocoa powder, and 200g caster sugar to the food processor. Mix well.
  6. Make a well in the dry ingredients. Add 175g melted unsalted butter, 1 teaspoon vanilla extract, and 3 large eggs.
  7. Stir well to combine until just mixed.
  8. Gently fold in the chopped chocolate pieces.
  9. Spoon the mixture into the prepared baking tin and smooth the surface with the back of a spoon.
  10. Bake on the centre shelf of the oven for 40 minutes at 180°C (350°F), or until a toothpick inserted into the center comes out with moist crumbs.
  11. Remove from oven and let cool completely in the tin before cutting.
  12. Cut into squares or rectangles and serve. Store in an airtight container, lining the base and between layers with baking paper, for up to 3 days.
