How to Make Delicious Fortune Cookies

  1. Prepare your fortunes: Write fortunes on 3 1/2 inch long by 1/2 inch wide strips of paper.
  2. Preheat your oven to 300°F (150°C).
  3. Grease two 9x13 inch baking sheets.
  4. In a medium bowl, lightly beat the egg white, vanilla extract, almond extract, and vegetable oil until frothy, but not stiff.
  5. In a separate bowl, sift together the flour, cornstarch, salt, and sugar.
  6. Gradually stir the water into the dry ingredients until a smooth paste forms.
  7. Gently add the dry ingredients to the wet ingredients, stirring until a smooth batter forms. The batter should be thick enough to drop easily from a spoon, but not runny.
  8. Place level tablespoons of batter onto the prepared baking sheets, spacing them at least 3 inches apart.
  9. Gently tilt the baking sheet back and forth to spread each tablespoon of batter into a 4-inch circle.
  10. Bake for 8-10 minutes, or until the edges are lightly golden brown and the cookies are easily removed from the baking sheet.
  11. Working quickly, remove a cookie from the baking sheet using a spatula. Immediately flip the cookie over in your hand.
  12. Place a fortune in the center of the cookie.
  13. Fold the cookie in half. Gently curve the edges over the rim of a round object (such as a glass, wooden spoon handle, or the edge of a muffin tin) to create the classic fortune cookie shape.
  14. Place the finished cookie in a muffin tin cup to help it retain its shape while cooling.
  15. Repeat steps 11-14 with the remaining cookies.
  16. Let the fortune cookies cool completely in the muffin tin before serving.
