How to Make Fool Madamas

  1. If using dried fava beans, rinse them thoroughly and soak in 6 cups of water overnight (at least 8 hours).
  2. Drain the soaked beans and place them in a large pot. Add fresh water to cover by about 2 inches. Add baking soda and bring to a boil.
  3. Reduce heat to low, cover, and simmer for approximately 1 hour, or until the beans are very tender and easily mashed. Add more water if needed to prevent sticking.
  4. Drain the beans, reserving about 1/2 cup of the cooking liquid.
