How to Make Fool Madamas
- If using dried fava beans, rinse them thoroughly and soak in 6 cups of water overnight (at least 8 hours).
- Drain the soaked beans and place them in a large pot. Add fresh water to cover by about 2 inches. Add baking soda and bring to a boil.
- Reduce heat to low, cover, and simmer for approximately 1 hour, or until the beans are very tender and easily mashed. Add more water if needed to prevent sticking.
- Drain the beans, reserving about 1/2 cup of the cooking liquid.
- Transfer the beans to a food processor or use a potato masher to mash them until smooth. You can leave some texture if you prefer.
- Add the garlic, olive oil, lemon juice, salt, and optional cilantro, cumin and cayenne pepper to the mashed beans. Stir to combine.
- Add a little of the reserved cooking liquid if needed to reach your desired consistency.
- Serve warm on toast, in pita bread with tahini, as a side dish, or as a main course. Garnish with extra cilantro if desired.
