How to Make Guava Cheese Flan

  1. Preheat oven to 350°F (175°C).
  2. In a 9-inch round cake pan, combine 1 cup granulated sugar and 1/2 cup water.
  3. Stir until sugar is slightly dissolved.
  4. Place pan on stovetop over medium heat.
  5. Cook sugar for 10-12 minutes, without stirring, until it turns a deep golden brown color. Watch carefully to prevent burning.
  6. Carefully swirl the pan (using oven mitts) to coat the bottom and sides with caramel. Be cautious as the caramel will be very hot.
  7. Place the pan on a wire rack to cool and allow the caramel to harden slightly.
  8. Meanwhile, in a blender, combine 1 (8 ounce) package cream cheese, softened; 1 (12 ounce) jar guava paste; 1 (12 ounce) can evaporated milk; 3 large eggs; 1 teaspoon vanilla extract.
  9. Blend until completely smooth and creamy.
  10. Pour the flan mixture over the cooled caramel in the pan.
  11. Cover the pan tightly with aluminum foil.
  12. Place the cake pan in a larger, shallow baking pan.
  13. Carefully pour hot water into the larger pan until it comes halfway up the sides of the cake pan (this creates a water bath).
  14. Bake for 1 hour to 1 hour and 15 minutes, or until a knife inserted into the center comes out clean.
  15. Remove the cake pan from the water bath and let it cool completely on a wire rack.
  16. Carefully run a thin knife around the edges of the flan to loosen it from the pan.
  17. Refrigerate for at least 3 hours, or preferably overnight, to allow the flan to chill completely and set.
  18. To unmold, invert the pan onto a large serving plate or pie dish.
  19. Garnish with fresh mango and kiwi slices, if desired.
