How to Make High Fiber Oat Bar

  1. Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides to lift the bars out later.
  2. In a large bowl, combine 2 cups rolled oats, 1/2 cup wheat germ, and 1/2 cup sunflower seeds.
  3. Spread the oat mixture evenly onto a baking sheet. Bake for 15 minutes, stirring every 5 minutes, until lightly toasted.
  4. While the oats are toasting, combine 1/2 cup honey, 1/2 cup packed brown sugar, 1 teaspoon vanilla extract, and 1/2 cup (1 stick) unsalted butter in a medium saucepan over medium heat.
