How to Make Hoisin Salmon With Bok Choy

  1. Preheat grill to medium-high heat. Lightly oil the grates.
  2. Bring a large pot of salted water to a boil. Fill a large bowl with ice water and set aside.
  3. Halve the bok choy lengthwise. Rinse thoroughly under cold running water, separating leaves to remove any grit.
  4. Blanch bok choy in boiling water for 1 minute, until leaves are bright green and slightly wilted.
  5. Immediately transfer bok choy to the ice water bath to stop the cooking process.
  6. Once cooled, drain the bok choy and pat dry with paper towels.
  7. In a small bowl, whisk together 2 tablespoons hoisin sauce and 1 tablespoon vegetable oil.
  8. Rub the hoisin mixture evenly over both sides of the salmon fillets.
  9. Place salmon fillets skin-side down on the preheated grill.
  10. Grill with the lid closed for 6 minutes.
  11. Flip the salmon and grill for an additional 4-6 minutes for 1-inch thick fillets, or 10-12 minutes for 1.5-inch thick fillets, until cooked through and flakes easily with a fork.
  12. Meanwhile, lightly brush the bok choy with 1 teaspoon sesame oil.
  13. During the last 2 minutes of salmon grilling, place the bok choy cut-side down on the grill next to the salmon.
  14. Grill the bok choy on both sides until grill marks appear (about 1-2 minutes per side).
  15. Serve the Hoisin Salmon and Grilled Bok Choy immediately. Enjoy with your favorite noodles or rice!
