How to Make Allen Frey S Tuna Steaks
- Whisk together the marinade: 2 tablespoons tamari, 1 tablespoon lemon juice, 1 tablespoon lime juice, 1 tablespoon grated fresh ginger, and 2 cloves minced garlic. Place 1-2 pounds of tuna steaks (1-1.5 inches thick) in a resealable bag and pour the marinade over them. Marinate for at least 2 hours in the refrigerator.
- Prepare your stovetop smoker with cherry wood chips according to the manufacturer's instructions. Place the tuna steaks on the smoker rack. Smoke for 13-14 minutes over medium heat, avoiding overcooking (tuna will continue to cook slightly after removing from heat).
- At this stage, the tuna should be slightly raw in the center – this is the ideal texture for many! Remove from smoker and serve immediately.
- For completely cooked tuna, after step 2, grill the steaks for 2 minutes per side over medium-high heat on a separate grill pan or skillet.
