How to Make Idaho Sunrise

  1. Preheat oven to 450°F (232°C).
  2. Scrub one medium russet potato thoroughly and pat dry. Pierce the potato several times with a fork.
  3. Bake for 40-50 minutes, or until the potato is easily pierced with a fork and feels tender.
  4. Remove the potato from the oven and carefully slice a lengthwise piece off the top, creating a large enough opening to scoop out the inside.
  5. Mash the potato insides with 1 teaspoon of butter.
  6. Season the mashed potato with salt and pepper to taste. Stir in 2 teaspoons of milk.
  7. Refill the potato shell with the mashed potato mixture.
  8. Place the stuffed potato on a pie plate or baking sheet.
  9. Crack one large egg gently on top of the potato.
  10. Spoon 1 teaspoon of melted butter over the egg. Season with salt and pepper.
  11. Bake for 8-10 minutes, or until the egg white is set but the yolk is still runny.
  12. Serve immediately and enjoy!
