How to Make Italian Cafe Ricotta

  1. In a small bowl, combine 2 tablespoons instant coffee granules and 2 tablespoons granulated sugar.
  2. Add 1/2 cup boiling water and stir until the coffee and sugar are completely dissolved. Set aside to cool completely.
  3. In a blender or food processor, combine 15 ounces ricotta cheese and 1/2 cup sour cream. Blend until completely smooth and creamy.
  4. Add the cooled coffee mixture and 1 tablespoon of rum to the ricotta mixture. Blend until well combined.
  5. Cover and refrigerate for at least 4 hours, or preferably overnight.
  6. To make the whipped cream: In a chilled mixing bowl, pour 1 cup heavy cream. Beat with an electric mixer on medium speed until the cream begins to thicken.
  7. Add 2 tablespoons granulated sugar and 1/2 teaspoon almond extract. Continue whipping until stiff peaks form.
  8. Refrigerate the whipped cream until ready to serve.
  9. To serve, melt 2 ounces of semi-sweet chocolate chips. Spoon a small amount of melted chocolate into the bottom of each demitasse cup.
  10. Fill each cup about 3/4 full with the chilled ricotta mixture.
  11. Add another small amount of melted chocolate on top of the ricotta mixture.
  12. Top with a dollop of whipped cream.
  13. Garnish with chocolate curls or shavings and slivered almonds.
  14. Serve immediately and enjoy!
