How to Make Kolacky

  1. In a large bowl, cream together 8 ounces (225g) softened cream cheese, 1/2 cup (115g) softened unsalted butter, 1 teaspoon baking powder, and 2 large egg yolks using a pastry blender until well combined.
  2. Stir in 1/2 cup (120ml) sour cream. Gradually add 3 cups (375g) all-purpose flour, sifting it in to prevent lumps, until a soft dough forms.
  3. Add 1 teaspoon vanilla extract and knead the dough until smooth and no longer sticky (about 5 minutes).
  4. Roll the dough into 1-inch balls (approximately 1/4 cup each). Cover and refrigerate overnight.
  5. **Prepare the Filling (Nut Filling):** In a medium bowl, beat 1 large egg white until frothy. Add 1 cup (100g) finely crushed walnuts, 2 tablespoons melted unsalted butter, 1/4 cup granulated sugar, 2 tablespoons packed brown sugar, and 1/2 teaspoon ground cinnamon. Mix well and refrigerate.
  6. Preheat your oven to 350°F (175°C). Lightly flour your work surface.
  7. Remove dough from the refrigerator as needed. On a lightly floured surface, roll out a small portion of the dough to about 1/8 inch thickness.
