How to Make Baked Egg Muffins

  1. Cook 4 slices of bacon in a large skillet over medium-high heat for 10 minutes, turning occasionally, until evenly browned.
  2. Drain the bacon on a paper towel-lined plate, crumble, and set aside.
  3. Preheat oven to 375°F (190°C).
  4. Grease 6 muffin cups.
  5. In a small bowl, whisk together 2 tablespoons melted butter and 1 tablespoon maple syrup.
  6. Use a rolling pin to flatten 6 slices of bread (about 1/2 inch thick).
  7. Brush each flattened bread slice with the butter mixture.
  8. Line each muffin cup with a flattened bread slice, pressing gently into the bottom and up the sides.
  9. Sprinkle 1 teaspoon of crumbled bacon into the bottom of each bread cup.
  10. Crack one egg into each bread cup.
  11. Season with salt and pepper to taste.
  12. Top each egg with 1 tablespoon heavy cream and 1 tablespoon shredded cheese (cheddar, Monterey Jack, etc.).
  13. Bake for 10-14 minutes, or until the egg whites are set and the eggs are cooked to your liking.
  14. Let cool slightly before removing from muffin cups and serving. Enjoy!

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
