How to Make Real New York Style Cheesecake Supreme

  1. Preheat oven to 350°F (175°C). Crush graham crackers into fine crumbs. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until evenly moistened.
  2. Press the graham cracker mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes. Remove from oven and let cool completely.
  3. In a large bowl, beat cream cheese until smooth and creamy. Gradually add sugar, beating until well combined. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream.
  4. Pour the cheesecake batter over the cooled crust. Place the springform pan in a larger roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan (this creates a water bath).
  5. Bake for 75 minutes, or until the cheesecake is set around the edges but still slightly jiggly in the center. Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 1 hour.
  6. Remove the cheesecake from the oven and let it cool completely on a wire rack. Once cooled, cover and refrigerate for at least 4 hours, or preferably overnight, before serving.
  7. Carefully remove the sides of the springform pan before serving. Garnish as desired (optional: fresh berries, chocolate shavings, whipped cream).
