How to Make Light Peach Cake

  1. Preheat oven to 325°F (160°C).
  2. Lightly grease and flour a 9-inch round cake pan.
  3. In a large bowl, whisk together 2 cups all-purpose flour, 1 ½ cups granulated sugar substitute, 2 ½ teaspoons baking powder, and ½ teaspoon salt.
  4. Make a well in the center of the dry ingredients.
  5. In a separate bowl, whisk together ½ cup vegetable oil, 1 large egg yolk, 1 egg substitute (equivalent to 1 egg), ½ cup water, 1 teaspoon vanilla extract, and 1 tablespoon orange zest.
  6. Pour the wet ingredients into the well of the dry ingredients and gently mix until just combined.
  7. In a clean bowl, beat 1 large egg white with ½ teaspoon cream of tartar until stiff peaks form.
  8. Gently fold the egg whites into the batter.
  9. Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  11. Once cooled, use a serrated knife to slice the cake horizontally into two layers.
  12. Spread ¾ of a container of whipped topping (approximately 8 oz) over the bottom layer.
  13. Arrange sliced fresh peaches (about 2 cups) on top of the whipped topping, reserving a few slices for garnish.
  14. Top with the second cake layer.
  15. Decorate the top of the cake with rosettes of the remaining whipped topping and the reserved peach slices.
  16. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
