How to Make Apple Souffle
- Preheat oven to 400°F (200°C).
- Thinly slice 6 medium apples (about 6 cups sliced) and toss gently with 2 tablespoons lemon juice, 1/4 cup granulated sugar, and 1 teaspoon ground cinnamon.
- In a large bowl, beat 6 large egg yolks until pale, thick, and creamy.
- Whisk in 2 tablespoons potato starch and a pinch of salt until well combined.
- Gently fold in the prepared apple slices.
- In a clean, grease-free bowl, beat 6 large egg whites until stiff, glossy peaks form.
- Carefully fold the egg whites into the apple mixture in two additions, being gentle not to deflate the egg whites.
- Lightly grease a 2-quart casserole dish or six individual ramekins with butter or oil and place in the preheated oven for 5 minutes to warm.
- Pour the apple mixture into the warm dish. If using ramekins, place them in a baking dish and pour enough hot water into the dish to come halfway up the sides of the ramekins (bain-marie).
- Bake for 35-40 minutes (20-25 minutes for ramekins), or until the souffle is puffed and golden brown and a knife inserted near the center comes out clean.
- Let cool slightly before serving. Enjoy immediately for the best texture!
