How to Make Low Fat Taco Casserole

  1. Preheat oven to 375°F (190°C).
  2. Grease an 11x7 inch baking dish.
  3. In a large skillet, brown 1 lb ground turkey and 1 medium onion, chopped, over medium-high heat. Break up the turkey as it cooks.
  4. Drain off any excess grease and return the turkey and onion to the skillet.
  5. Add 1/2 cup water, 1 cup taco sauce, 1 packet taco seasoning, and 1 (4 oz) can diced green chiles (undrained).
  6. Stir to combine and simmer for 4-5 minutes.
  7. In the prepared baking dish, layer half of 12 corn or hard taco shells in the bottom.
  8. Layer half of the turkey mixture over the taco shells.
  9. Sprinkle 1 cup shredded mild cheddar cheese over the meat.
  10. Layer the remaining taco shells over the cheese.
  11. Layer the remaining turkey mixture on top of the shells.
  12. Sprinkle 1 cup shredded sharp cheddar and 1 cup shredded Monterey Jack/Colby cheese blend over the top.
  13. Arrange 1 cup chopped tomatoes, 1/4 cup chopped green onions, and 1/2 cup chopped orange bell pepper on top.
  14. Bake for 20-25 minutes, or until bubbly and the cheese is melted and golden brown.
  15. Remove from oven and let stand for 5 minutes before serving.
  16. Serve hot, topped with sliced jalapeños and sour cream, if desired.
