How to Make Lynnie's Super Moist Banana Cake

  1. Preheat oven to 180°C (350°F). Grease and flour a 9x13 inch baking pan.
  2. In a medium saucepan, combine 175g granulated sugar, 3 ripe bananas (mashed), 1 tsp baking soda, 120ml milk, and 115g margarine or butter.
  3. Cook over medium heat, stirring constantly, until the mixture turns a rich caramel color (about 8-10 minutes).
  4. Remove from heat and let cool completely.
  5. Once cooled, add 2 large eggs and 225g all-purpose flour to the caramel mixture.
  6. Mix until just combined. Be careful not to overmix.
  7. Pour batter into the prepared pan.
  8. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let cool completely in the pan before frosting with your favorite cream cheese icing.
