How to Make All Bran Banana Bread
- Preheat your oven to 180°C (350°F). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together the dry ingredients: 1 cup All-Bran cereal, 1 ½ cups all-purpose flour, ¾ cup granulated sugar, 1 teaspoon baking soda, 1 teaspoon baking powder, ½ teaspoon salt.
- In a separate bowl, mash 3 ripe bananas with a fork. Add 1 large egg, ½ cup milk (any kind), ¼ cup water, and 1 teaspoon vanilla extract to the mashed bananas. Mix well.
- Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-55 minutes, or until a wooden skewer inserted into the center comes out clean. If the top is browning too quickly, cover loosely with foil.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
