How to Make Mandarin Salmon

  1. Preheat oven to 375°F (190°C).
  2. Cut salmon into 2-3 inch pieces (about 1 pound) and place in a ziplock bag.
  3. Trim 4 green onions and cross-cut into 2-inch pieces. Arrange in a single layer in the bottom of a 9-inch square Pyrex baking dish.
  4. Juice 1 cup of mandarin oranges (about 6-8 oranges). In a bowl, whisk together the mandarin orange juice, 2 tablespoons soy sauce, 1 tablespoon honey, 1 teaspoon grated ginger, and 1/2 teaspoon sesame oil.
  5. Add the salmon to the marinade and gently toss to coat. Marinate for 15-20 minutes.
  6. Remove the salmon from the marinade and place skin-side up on top of the green onions in the baking dish.
  7. Pour the remaining marinade evenly over the salmon.
  8. Bake uncovered for 30 minutes, or until the salmon is cooked through and flakes easily with a fork.
  9. Serve over cooked rice, spooning the onions and sauce over the salmon.
  10. Garnish with sesame seeds (optional) and enjoy!
