How to Make Mandarin Salmon
- Preheat oven to 375°F (190°C).
- Cut salmon into 2-3 inch pieces (about 1 pound) and place in a ziplock bag.
- Trim 4 green onions and cross-cut into 2-inch pieces. Arrange in a single layer in the bottom of a 9-inch square Pyrex baking dish.
- Juice 1 cup of mandarin oranges (about 6-8 oranges). In a bowl, whisk together the mandarin orange juice, 2 tablespoons soy sauce, 1 tablespoon honey, 1 teaspoon grated ginger, and 1/2 teaspoon sesame oil.
- Add the salmon to the marinade and gently toss to coat. Marinate for 15-20 minutes.
- Remove the salmon from the marinade and place skin-side up on top of the green onions in the baking dish.
- Pour the remaining marinade evenly over the salmon.
- Bake uncovered for 30 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve over cooked rice, spooning the onions and sauce over the salmon.
- Garnish with sesame seeds (optional) and enjoy!
