How to Make Marzipan Date Bars

  1. Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  2. In a large bowl, cream together 1 cup (2 sticks) softened butter, ¾ cup packed light brown sugar, and ½ cup granulated sugar until light and fluffy.
  3. Beat in 2 large eggs and 1 teaspoon vanilla extract until well combined.
  4. In a separate bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Stir in 1 ½ cups rolled oats and 1 cup chopped pitted dates.
  7. Press half of the date mixture into the prepared baking pan.
  8. Roll out 8 ounces of marzipan between two sheets of parchment paper to form an 8x8 inch square. Carefully peel off the top sheet of parchment paper and place the marzipan square on top of the date layer in the pan. Gently press into place.
  9. Spread the remaining date mixture evenly over the marzipan layer.
  10. Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out with moist crumbs.
  11. Let cool completely in the pan before cutting into bars.
