How to Make Mini Apple Turnovers

  1. In a mixing bowl, beat together 4 ounces cream cheese and 1/2 cup (1 stick) softened butter until smooth.
  2. Refrigerate 1 large egg white.
  3. Beat 1 large egg yolk and 2 tablespoons of water into the cream cheese mixture.
  4. Gradually add 2 1/2 cups all-purpose flour, beating until a dough forms.
  5. Shape the pastry dough into a ball.
  6. Cover and refrigerate for at least 1 hour.
  7. Meanwhile, in a large skillet, combine 4 cups peeled and sliced apples, 1/2 cup granulated sugar, 2 teaspoons ground cinnamon, and 1/4 teaspoon ground nutmeg.
  8. Bring the apple mixture to a boil over medium heat.
  9. Reduce heat to low, cover, and simmer for 8-10 minutes, or until apples are tender.
  10. Remove from heat and let cool slightly.
  11. On a lightly floured surface, roll out the chilled pastry dough to 1/8-inch thickness.
  12. Use a 4-inch cookie cutter or knife to cut out circles.
  13. Place a spoonful of the apple mixture in the center of each circle.
  14. Brush the edges of the pastry with water.
  15. Fold the pastry over the filling, pressing edges firmly to seal.
  16. In a small bowl, whisk together the refrigerated egg white and 1 tablespoon of water.
  17. Brush the egg white mixture over the turnovers.
  18. Sprinkle with additional granulated sugar, if desired.
  19. Place turnovers on a greased baking sheet.
  20. Bake at 375°F (190°C) for 18-22 minutes, or until golden brown.
  21. Remove from oven and let cool on a wire rack.
  22. Serve warm, optionally with a scoop of vanilla ice cream.
