How to Make Mushroom Piadini

  1. In a large bowl, whisk together flour, salt, and celery seeds (or basil).
  2. Gradually add warm water and milk, mixing until a dough forms. Add more milk if needed to reach a soft, slightly sticky consistency.
  3. Knead the dough for 5-7 minutes until smooth and elastic.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  5. Add sliced mushrooms and saute for 5-7 minutes, until softened and lightly browned.
  6. Stir in chopped spinach and cook until wilted, about 2 minutes.
  7. Add mozzarella cheese and cook until melted and bubbly, about 2 minutes.
  8. Pour in the beaten eggs and cook, stirring occasionally, until the eggs are set and the mixture is combined.
  9. Preheat your oven to 400°F (200°C).
  10. Divide the dough into 2 equal portions. Roll each portion into a 6-inch circle.
  11. Fold each circle in half to form a semi-circle, then fold the edges into the center to form a 3-inch wide strip.
  12. Fold the strip in half again to form a rectangle.
  13. Place the mushroom filling in the center of the rectangle and fold it to a star shape by bringing the corners to the middle. Pinch to seal.
  14. Place the piadini on a baking sheet and bake for 15-20 minutes, or until golden brown and crispy.
