How to Make Nameless Spice Cake

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour two 8-inch or 9-inch round cake pans, or one bundt pan. Set aside.
  3. In a large bowl, cream together 1 cup (2 sticks) shortening and 1 ¾ cups granulated sugar until light and fluffy.
  4. Add 3 large eggs one at a time, beating well after each addition.
  5. Stir in 2 teaspoons vanilla extract and 1 tablespoon lemon juice.
  6. In a separate bowl, whisk together 2 ½ cups all-purpose flour, 2 teaspoons ground cinnamon, 1 teaspoon ground cloves, 1 teaspoon ground nutmeg, ½ teaspoon ground allspice, 1 teaspoon baking soda, and 1 teaspoon salt.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with 1 cup buttermilk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
