How to Make Chocolate Zucchini Bars

  1. Preheat oven to 325°F (160°C).
  2. Grease and flour a 13x9x2 inch baking pan.
  3. In a large bowl, whisk together 2 cups all-purpose flour, ¾ cup unsweetened cocoa powder, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, and 1 teaspoon baking powder.
  4. Set aside.
  5. In a separate large bowl, cream together ½ cup (1 stick) softened shortening, ½ cup vegetable oil, 1 ¾ cups granulated sugar, and 2 large eggs on low speed until well combined.
  6. Beat in 1 cup sour cream and 1 teaspoon vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  7. Beat on medium speed for 2 minutes.
  8. Gently fold in 2 cups grated zucchini and 1 cup chocolate chips.
  9. Pour batter into the prepared pan and spread evenly.
  10. Sprinkle ½ cup chopped nuts (optional) over the top.
  11. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  12. Let cool completely in the pan on a wire rack before cutting into 16 bars.
