How to Make Old Virginia Nut Brittle
- In a large, heavy-bottomed saucepan, combine water and sugar. Stir over medium heat until sugar is completely dissolved.
- Stir in the corn syrup.
- Clip a candy thermometer to the side of the pan, making sure it doesn't touch the bottom. Cook the mixture, stirring occasionally, until it reaches 250°F (121°C) on a candy thermometer.
- Add salt and peanuts. Stir well to combine.
- Continue cooking, stirring frequently to prevent burning, until the mixture reaches 295°F (146°C) on a candy thermometer.
- Remove the pan from the heat. Immediately stir in the butter, baking soda, and vanilla extract until completely blended. The mixture will foam up – be careful!
- Grease a large marble slab or baking sheet with butter or cooking spray. Quickly pour the hot brittle onto the prepared surface and spread it evenly to about 1/4 inch thickness using a buttered spatula or spoon.
- Let the brittle cool and harden completely, at least 1-2 hours.
- Once completely cool and hard, break the brittle into irregular pieces.
