How to Make Passover Apple Cake
- Preheat oven to 350°F (175°C). Grease and flour an 8 or 9-inch glass baking pan.
- In a large bowl, beat 4 large eggs, 1 ½ cups granulated sugar, and ½ cup vegetable oil until light and fluffy (about 3 minutes).
- Gradually add 2 cups Passover cake meal (matzah cake meal), mixing until just combined. Be careful not to overmix.
- In a separate bowl, combine ½ cup chopped walnuts or pecans, ½ cup granulated sugar, 1 teaspoon ground cinnamon, and ¼ teaspoon ground nutmeg. This is your topping mixture.
- Pour half of the batter into the prepared baking pan.
- Sprinkle half of the topping mixture evenly over the batter.
- Peel and thinly slice 4 medium apples (about 3 cups). Arrange half of the apple slices over the batter.
- Pour the remaining batter over the apples and top with the remaining apple slices.
- Sprinkle the remaining topping mixture evenly over the apples.
- Bake for 95 minutes, or until a wooden skewer inserted into the center comes out clean. The sides of the cake should also pull away slightly from the pan.
- Let the cake cool completely in the pan before serving. Once cooled, wrap tightly in plastic wrap and store at room temperature.
