How to Make Plain Bagels

  1. Combine all ingredients in a stand mixer fitted with a dough hook to form a smooth, elastic dough. Knead for 5-7 minutes until the dough is smooth and pulls away from the sides of the bowl.
  2. Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place until doubled in size (approximately 1-1.5 hours).
  3. Gently punch down the risen dough to release the air.
  4. Divide the dough into four equal parts.
  5. Divide each of the four parts into three equal pieces (resulting in 12 bagel pieces).
  6. Roll each piece into a smooth ball. Use your thumb to create a 1-1.5 inch hole in the center of each ball. Gently stretch and rotate the dough to form a ring.
  7. Heat 2 quarts of water and 2 tablespoons of sugar in a large saucepan until boiling.
  8. Carefully place a few bagels (3-4 at a time) in the boiling water.
  9. Simmer for 3 minutes, turning once halfway through.
  10. Remove the bagels with a slotted spoon and place them on a greased baking sheet.
  11. Bake at 375°F (190°C) for 20-25 minutes, or until golden brown.
  12. Remove from baking sheet and let cool completely on a wire rack before serving or storing.
