How to Make Plain Bagels
- Combine all ingredients in a stand mixer fitted with a dough hook to form a smooth, elastic dough. Knead for 5-7 minutes until the dough is smooth and pulls away from the sides of the bowl.
- Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place until doubled in size (approximately 1-1.5 hours).
- Gently punch down the risen dough to release the air.
- Divide the dough into four equal parts.
- Divide each of the four parts into three equal pieces (resulting in 12 bagel pieces).
- Roll each piece into a smooth ball. Use your thumb to create a 1-1.5 inch hole in the center of each ball. Gently stretch and rotate the dough to form a ring.
- Heat 2 quarts of water and 2 tablespoons of sugar in a large saucepan until boiling.
- Carefully place a few bagels (3-4 at a time) in the boiling water.
- Simmer for 3 minutes, turning once halfway through.
- Remove the bagels with a slotted spoon and place them on a greased baking sheet.
- Bake at 375°F (190°C) for 20-25 minutes, or until golden brown.
- Remove from baking sheet and let cool completely on a wire rack before serving or storing.
