How to Make Polish Kraut Soup

  1. Chop 1 medium onion, 2 carrots (peeled or unpeeled), 2 celery stalks, and 1 lb kielbasa (sliced or diced).
  2. Gently squeeze excess liquid from 1 lb sauerkraut (do not rinse completely).
  3. In a large pot, bring 8 cups of water to a boil. Add 2 beef bouillon cubes (or 2 tbsp beef bouillon paste), 1 tsp caraway seeds, 1 tsp marjoram, 1 bay leaf, and ½ tsp black pepper.
  4. Add the chopped onions, carrots, celery, sauerkraut, and kielbasa to the boiling broth. Return to a boil, then reduce heat to a simmer.
  5. Simmer for 10 minutes.
  6. Add 2 medium potatoes (scrubbed and quartered, skin on or off, your preference), and continue to simmer for 20 minutes, or until potatoes are tender.
  7. Before serving, taste and adjust seasoning as needed. Remove bay leaf.
