How to Make Pork And Apple Hot Pot
- Preheat oven to 325°F (160°C).
- In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add 1 large onion, chopped, and sauté until softened, about 10 minutes.
- Transfer the sautéed onions to a bowl.
- Add 6 slices of bacon to the skillet and cook until the fat is rendered and the bacon is crispy, about 3-5 minutes. Remove bacon with a slotted spoon, reserving the bacon fat in the skillet.
- Add the cooked bacon to the bowl with the onions. Set aside.
- In a large freezer bag, combine 1/4 cup all-purpose flour and 1 teaspoon pumpkin pie spice. Add 6 pork chops (about 1 inch thick), seal the bag, and shake until the chops are evenly coated.
- Remove the chops from the bag, shaking off excess flour. Set aside.
- Return the skillet (with reserved bacon fat) to medium heat. Add the pork chops in batches, searing them for 2-3 minutes per side until lightly browned. Transfer the seared chops to a plate.
- Peel, core, and slice 3 medium apples (such as Honeycrisp or Granny Smith) into thin wedges.
- In an 8-inch diameter, 5-inch deep oven-safe pot, layer the ingredients as follows: half of the onion and bacon mixture, 3 pork chops, half of the apple slices, the remaining onion and bacon mixture, the remaining 3 pork chops, the remaining apple slices.
- In the same skillet, add the reserved spiced flour. If the pan is dry, add 1 tablespoon of olive oil. Whisk together over medium-low heat until a smooth paste forms.
- Slowly whisk in 1 1/2 cups of apple cider until smooth and bring to a simmer.
- Pour the sauce over the layered ingredients in the pot.
- Cover the pot tightly with a lid or aluminum foil.
- Place the pot on a baking sheet to catch any spills.
- Bake for 2.5-3 hours, or until the pork chops are tender and the apples are very soft.
- Serve hot and enjoy!
