How to Make Pork And Apple Hot Pot

  1. Preheat oven to 325°F (160°C).
  2. In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add 1 large onion, chopped, and sauté until softened, about 10 minutes.
  3. Transfer the sautéed onions to a bowl.
  4. Add 6 slices of bacon to the skillet and cook until the fat is rendered and the bacon is crispy, about 3-5 minutes. Remove bacon with a slotted spoon, reserving the bacon fat in the skillet.
  5. Add the cooked bacon to the bowl with the onions. Set aside.
  6. In a large freezer bag, combine 1/4 cup all-purpose flour and 1 teaspoon pumpkin pie spice. Add 6 pork chops (about 1 inch thick), seal the bag, and shake until the chops are evenly coated.
  7. Remove the chops from the bag, shaking off excess flour. Set aside.
  8. Return the skillet (with reserved bacon fat) to medium heat. Add the pork chops in batches, searing them for 2-3 minutes per side until lightly browned. Transfer the seared chops to a plate.
  9. Peel, core, and slice 3 medium apples (such as Honeycrisp or Granny Smith) into thin wedges.
  10. In an 8-inch diameter, 5-inch deep oven-safe pot, layer the ingredients as follows: half of the onion and bacon mixture, 3 pork chops, half of the apple slices, the remaining onion and bacon mixture, the remaining 3 pork chops, the remaining apple slices.
  11. In the same skillet, add the reserved spiced flour. If the pan is dry, add 1 tablespoon of olive oil. Whisk together over medium-low heat until a smooth paste forms.
  12. Slowly whisk in 1 1/2 cups of apple cider until smooth and bring to a simmer.
  13. Pour the sauce over the layered ingredients in the pot.
  14. Cover the pot tightly with a lid or aluminum foil.
  15. Place the pot on a baking sheet to catch any spills.
  16. Bake for 2.5-3 hours, or until the pork chops are tender and the apples are very soft.
  17. Serve hot and enjoy!
