  • 6 slices bacon
  • 1 medium zucchini, diced
  • Fresh Corn Kernels

How to Make Bacon And Sweet Corn Pasta

  1. Bring a large pot of salted water to a boil. Add 1 pound of pasta (your favorite shape) and cook according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. While the pasta cooks, cook 6 slices of bacon in a large skillet over medium heat until crispy. Remove bacon with a slotted spoon and set aside, reserving 1 tablespoon of bacon drippings.
  3. Add 1 medium zucchini, diced, and 1 cup of fresh or frozen corn kernels to the skillet with the bacon drippings. Sauté for 5-6 minutes, until the zucchini is tender-crisp.
  4. Add the cooked pasta to the skillet with the zucchini and corn.
  5. Crumble the cooked bacon and add it to the skillet along with 1/2 cup heavy cream, 1/4 cup chopped fresh basil, and 1/4 cup pine nuts.
  6. Stir in the reserved pasta water, 1 tablespoon at a time, until you reach your desired sauce consistency.
  7. Season generously with salt and freshly ground black pepper to taste.
  8. Serve immediately and garnish with extra basil, if desired.
