How to Make Rainbow Popcorn
- Preheat oven to 300°F (150°C).
- Remove all unpopped kernels from your popped corn.
- Lightly grease a disposable 17x12x2-inch baking pan.
- Place the popped corn in the prepared pan and set aside.
- In a heavy 2-quart saucepan, combine the margarine, sugar, Jell-O, water, and corn syrup.
- Cook over medium heat, stirring constantly, until the mixture comes to a rolling boil.
- Attach a candy thermometer to the side of the pan.
- Continue cooking over medium heat, stirring constantly, until the thermometer reaches 255°F (124°C). This is the hard-crack stage.
- Carefully pour the hot syrup mixture evenly over the popcorn in the pan. Gently toss to coat all the popcorn.
- Bake in the preheated oven for 5 minutes.
- Remove from the oven, gently toss the popcorn again, and bake for another 5 minutes.
- Line a large baking sheet with foil.
- Pour the popcorn mixture onto the prepared foil.
- Let the popcorn cool completely before breaking it apart.
- Once cooled, store in an airtight container in a cool, dry place. Enjoy!
