How to Make Rainbow Popcorn

  1. Preheat oven to 300°F (150°C).
  2. Remove all unpopped kernels from your popped corn.
  3. Lightly grease a disposable 17x12x2-inch baking pan.
  4. Place the popped corn in the prepared pan and set aside.
  5. In a heavy 2-quart saucepan, combine the margarine, sugar, Jell-O, water, and corn syrup.
  6. Cook over medium heat, stirring constantly, until the mixture comes to a rolling boil.
  7. Attach a candy thermometer to the side of the pan.
  8. Continue cooking over medium heat, stirring constantly, until the thermometer reaches 255°F (124°C). This is the hard-crack stage.
  9. Carefully pour the hot syrup mixture evenly over the popcorn in the pan. Gently toss to coat all the popcorn.
  10. Bake in the preheated oven for 5 minutes.
  11. Remove from the oven, gently toss the popcorn again, and bake for another 5 minutes.
  12. Line a large baking sheet with foil.
  13. Pour the popcorn mixture onto the prepared foil.
  14. Let the popcorn cool completely before breaking it apart.
  15. Once cooled, store in an airtight container in a cool, dry place. Enjoy!
