How to Make Rich Guinness Cake

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a heavy saucepan over medium heat, bring 1 cup Guinness and 1/2 cup (1 stick) unsalted butter to a simmer.
  3. Remove from heat and whisk in 1/2 cup unsweetened cocoa powder until smooth. Set aside to cool slightly.
  4. In a large bowl, whisk together 2 cups all-purpose flour, 1 3/4 cups granulated sugar, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. In a separate bowl, beat 2 large eggs, 1 large egg yolk, and 1 cup sour cream with an electric mixer until well combined.
  6. Gradually add the cooled Guinness-chocolate mixture to the egg mixture, beating on low speed until just combined.
  7. Add the dry ingredients to the wet ingredients and beat for 30 seconds on the lowest speed.
  8. Gently fold the batter with a rubber spatula until just combined. Do not overmix.
  9. Pour batter into the prepared pan and bake for 50-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  11. Once the cake is completely cool, prepare your Guinness syrup (recipe #167683).
  12. To serve, cut a slice of cake, place it in a glass, add a scoop of vanilla ice cream, and drizzle generously with warm Guinness syrup.
  13. Enjoy!
