How to Make Rich Guinness Cake
- Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a heavy saucepan over medium heat, bring 1 cup Guinness and 1/2 cup (1 stick) unsalted butter to a simmer.
- Remove from heat and whisk in 1/2 cup unsweetened cocoa powder until smooth. Set aside to cool slightly.
- In a large bowl, whisk together 2 cups all-purpose flour, 1 3/4 cups granulated sugar, 1 teaspoon baking soda, and 1/2 teaspoon salt.
- In a separate bowl, beat 2 large eggs, 1 large egg yolk, and 1 cup sour cream with an electric mixer until well combined.
- Gradually add the cooled Guinness-chocolate mixture to the egg mixture, beating on low speed until just combined.
- Add the dry ingredients to the wet ingredients and beat for 30 seconds on the lowest speed.
- Gently fold the batter with a rubber spatula until just combined. Do not overmix.
- Pour batter into the prepared pan and bake for 50-55 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once the cake is completely cool, prepare your Guinness syrup (recipe #167683).
- To serve, cut a slice of cake, place it in a glass, add a scoop of vanilla ice cream, and drizzle generously with warm Guinness syrup.
- Enjoy!
