How to Make Smashed Sweet Potatoes With Apples

  1. Preheat oven to 375°F (190°C).
  2. Scrub sweet potatoes thoroughly and pierce several times with a fork.
  3. Bake for 1 hour, or until very soft when pierced with a fork. (Baking time may vary depending on the size of your potatoes)
  4. While potatoes are baking, prepare the orange cream sauce: In a medium bowl, whisk together orange juice, heavy cream, 1/4 cup (1/2 stick) of butter, brown sugar, nutmeg, cinnamon, salt, and pepper.
  5. Remove baked sweet potatoes from the oven and let cool slightly (about 15 minutes).
  6. Once cool enough to handle, cut sweet potatoes in half lengthwise and scoop out the flesh into a large bowl.
  7. Using an electric mixer (or a potato masher for a chunkier texture), mash half of the sweet potatoes.
  8. Add half of the orange cream sauce to the mashed sweet potatoes; mix until combined but still slightly chunky. Transfer to a large greased baking dish.
  9. Repeat steps 7 and 8 with the remaining sweet potatoes and sauce.
  10. In a large skillet, melt 2 tablespoons of butter over medium-high heat.
  11. Add apple wedges and 2 tablespoons of brown sugar to the skillet.
  12. Cook for 8-10 minutes, turning occasionally, until apples are tender and lightly caramelized.
  13. Arrange caramelized apples evenly over the top of the sweet potato mixture in the baking dish.
  14. Bake for 30 minutes, or until heated through and bubbly.
