How to Make Smoked Pork Chops With Potatoes Sauerkraut

  1. Preheat oven to 350°F (175°C).
  2. Peel and thinly slice 2 lbs Yukon Gold potatoes.
  3. Drain 1 (26 ounce) jar of sauerkraut, reserving about 1/4 cup of the juice.
  4. Thinly slice 1 medium apple (about 1 cup).
  5. In a large bowl, gently combine the potatoes, sauerkraut, and apple slices.
  6. Place half of the potato and sauerkraut mixture in a greased 9x13 inch baking dish.
  7. Spread 1 ½ tablespoons Dijon mustard evenly over the sauerkraut mixture.
  8. Arrange 4 (1-inch thick) smoked pork chops on top of the sauerkraut.
  9. Spread the remaining 1 ½ tablespoons of mustard over the pork chops.
  10. Cover the pork chops with the remaining potato and sauerkraut mixture.
  11. Season generously with salt and freshly ground black pepper.
  12. Dot the top with 2 tablespoons of butter.
  13. Cover the baking dish tightly with aluminum foil.
  14. Bake for 45 minutes.
  15. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and golden brown and the pork chops are cooked through (internal temperature of 145°F).
