How to Make Smoked Salmon With Sweet Onions

  1. In a shallow glass dish, combine 2 tablespoons of sugar, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 2 bay leaves, and 1/4 cup of dry white wine.
  2. Stir until sugar and salt are completely dissolved.
  3. Place the salmon fillet (about 6 ounces) in the marinade.
  4. Cover and refrigerate for at least 2 hours, or preferably overnight.
  5. Remove salmon from marinade and gently pat dry with paper towels.
  6. Place alder wood chips in the base of your stovetop smoker. Position the drip pan and smoker rack.
  7. Line the drip pan with aluminum foil and pour about 1/3 cup of the marinade into the drip pan.
  8. Place the salmon fillet on the smoker rack, skin-side down. Top with 1 medium sweet onion, thinly sliced. Arrange pre-cooked or raw potatoes (about 2 medium) and 1 bell pepper (any color), cut into chunks, around the salmon.
  9. Cover and smoke for 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork.
  10. Carefully transfer the salmon and onions to a serving platter using a spatula.
  11. Garnish with fresh parsley and lemon wedges.
  12. Serve immediately with your favorite dill sauce.
