How to Make Southwest Taco Pie

  1. Preheat oven to 400°F (200°C). Place pie crusts in a 9-inch pie plate.
  2. Partially bake pie crust for 10-12 minutes, or until lightly golden. Remove from oven and let cool slightly.
  3. Reduce oven temperature to 350°F (175°C).
  4. In a large skillet, brown the ground beef and chopped onion over medium-high heat until cooked through. Drain off any excess grease.
  5. Stir in taco seasoning mix and 1/2 cup of water according to package directions. Cook for 2 minutes.
  6. In a small bowl, combine refried beans and ½ cup of taco sauce.
  7. Spread half of the seasoned meat mixture evenly in the bottom of the pie crust.
  8. Top with half of the bean mixture.
  9. Sprinkle ¾ cup of cheese over the bean layer.
  10. Bake for 25-30 minutes, or until the cheese is melted and bubbly and the crust is golden brown.
  11. Remove from oven and let cool for 10 minutes.
  12. Top with the remaining meat mixture, bean mixture, and remaining ¾ cup of cheese.
  13. Bake for an additional 10-15 minutes, until heated through.
  14. Let cool slightly before topping with remaining taco sauce and serving with shredded lettuce, diced tomatoes, and sour cream.
