How to Make Soy Sauce Fried Noodles

  1. Cook egg noodles according to package directions. Drain and set aside, separating strands to prevent sticking.
  2. Cut Chinese broccoli stems into 2-inch pieces at an angle for even cooking.
  3. Mince the garlic.
  4. Heat 1 tbsp oil in a wok or large skillet over high heat. Add minced garlic and fry until lightly browned and fragrant (about 30 seconds).
  5. Add sliced pork and stir-fry until cooked through.
  6. Add cooked noodles and stir constantly to prevent sticking.
  7. Add Chinese broccoli and continue to stir-fry.
  8. Add 1 tablespoon of water at a time, if needed, to prevent sticking and help cook the broccoli. Do not add too much water at once.
  9. Once broccoli is tender-crisp, stir in soy sauce, sugar, and white pepper.
  10. Push the noodles to one side of the pan. Add remaining 1 tbsp of oil to the empty space.
  11. Crack the egg into the pan and let it cook until set.
  12. Gently break up the egg and mix it into the noodles.
  13. Serve immediately. Provide extra soy sauce, sugar, vinegar, chili powder, and white pepper on the side for diners to adjust seasoning to their preference.
