How to Make Summer Berry Sabayon
- In a heatproof bowl, whisk together the egg yolks, sugar, and salt until pale and thick.
- Place the bowl over a pan of gently simmering water (make sure the bottom of the bowl doesn't touch the water).
- Whisk continuously until the mixture is thick, pale, and has tripled in volume (this will take about 8-10 minutes). The sabayon should coat the back of a spoon.
- Remove from heat and gently whisk in the white wine.
- Divide the berries amongst serving dishes and spoon the sabayon over the top.
