How to Make Summer Berry Sabayon

  1. In a heatproof bowl, whisk together the egg yolks, sugar, and salt until pale and thick.
  2. Place the bowl over a pan of gently simmering water (make sure the bottom of the bowl doesn't touch the water).
  3. Whisk continuously until the mixture is thick, pale, and has tripled in volume (this will take about 8-10 minutes). The sabayon should coat the back of a spoon.
  4. Remove from heat and gently whisk in the white wine.
  5. Divide the berries amongst serving dishes and spoon the sabayon over the top.
  6. Serve immediately and enjoy! For an extra touch, garnish with a sprig of fresh mint or a dusting of icing sugar.
